Hyderabad’s Nomad’s Taco Earns Mexico’s Recognition for Authentic Cuisine

The Hyderabad-based gourmet cloud kitchen receives the Sello M distinction for preserving traditional Mexican culinary practices in India.

Nomad’s Taco, a gourmet Mexican cloud kitchen based in Hyderabad, has received the prestigious Sello M distinction from Mexico for its commitment to authentic Mexican cuisine. The recognition highlights the growing presence of international food traditions in India and celebrates establishments that preserve the culinary heritage of other countries.

Founded by Nidhi Varma, Nomad’s Taco has built its identity around introducing Indian diners to Mexican flavours, recipes and cooking traditions. The Sello M distinction recognises restaurants and culinary establishments operating outside Mexico that demonstrate a commitment to maintaining the authenticity and quality of traditional Mexican gastronomy.

The award was presented on September 18, 2026, at the Embassy of Mexico in New Delhi during celebrations marking the 216th anniversary of the beginning of Mexico’s War of Independence. Nidhi Varma accepted the recognition on behalf of Nomad’s Taco, which received the distinction for 2026. Bengaluru-based Mexican restaurant Sanchez was also recognised, receiving the award for 2025.

The Sello M, formally known as the Distintivo Sello de Calidad de la Cocina Mexicana, is jointly administered by Mexico’s Ministry of Foreign Affairs and the Mexican Academy of Gastronomy. The programme aims to promote Mexican culinary heritage internationally by recognising establishments that follow established standards for authentic cuisine.

To qualify, establishments must meet criteria relating to their menus, ingredients and culinary expertise. These include offering dishes rooted in traditional Mexican recipes, using characteristic ingredients and employing chefs or cooks with relevant training or experience in Mexican cuisine. The certification is valid for two years, after which establishments must undergo reassessment for renewal.

Nomad’s Taco’s recognition reflects its efforts to introduce a wider audience to Mexican food beyond familiar dishes. Its menu has featured offerings such as tacos, quesadillas, guacamole and Mexican-style preparations, providing customers with opportunities to explore different flavours and cooking techniques associated with the cuisine.

Traditional Mexican cuisine is recognised internationally for its cultural importance. In 2010, UNESCO added traditional Mexican cuisine to its Representative List of the Intangible Cultural Heritage of Humanity. The recognition encompasses not only recipes but also agricultural knowledge, traditional preparation methods and community practices passed down through generations.

The Sello M distinction therefore represents more than an award for a restaurant. It supports efforts to preserve Mexico’s culinary traditions beyond its borders and encourages food businesses to maintain cultural authenticity while introducing international cuisines to new markets. For Nomad’s Taco, the recognition marks an important milestone in bringing Mexican gastronomy to diners in Hyderabad and strengthening culinary connections between India and Mexico.
