India’s centuries-old sweetener, jaggery, is witnessing renewed global demand as consumers increasingly shift toward natural and minimally processed food products.
Known locally as gur, jaggery is now gaining recognition worldwide as a healthier alternative to refined sugar, strengthening India’s position in the global natural sweetener market.
India currently contributes more than 70 percent of global jaggery production, supported by its long-standing sugarcane cultivation heritage and extensive agro-processing network. The growing preference for clean-label and nutrient-rich foods has significantly boosted the international appeal of jaggery across food, wellness, and nutraceutical sectors.
Jaggery is produced by boiling and concentrating sugarcane juice or palm sap without chemical refining, allowing it to retain minerals such as iron, potassium, and magnesium. Unlike refined white sugar, the traditional sweetener undergoes minimal processing, making it popular among health-conscious consumers seeking natural food alternatives.
India’s connection with sugarcane cultivation dates back thousands of years, with references found in ancient Vedic literature. Historical accounts also indicate that Indian sugar-processing techniques were studied by other civilizations centuries ago, highlighting the country’s early leadership in sweetener production. The English word “sugar” itself is believed to have originated from the Sanskrit term “sarkara,” reflecting India’s deep-rooted influence on the global sweetener trade.
Export growth has further strengthened the industry. According to recent reports, India’s jaggery and confectionery exports have more than doubled over the past decade, driven by increasing international demand for organic and traditional food products. The expansion is creating new opportunities for rural farmers, small-scale processors, and agri-based enterprises across the country.
Industry experts believe the rising popularity of nutraceuticals, functional foods, and Ayurvedic wellness products is also contributing to jaggery’s global growth. As consumers become more aware of sustainable and naturally sourced ingredients, Indian jaggery is emerging as a key product in the evolving global food and health market.
With strong agricultural roots, growing export momentum, and increasing global awareness about healthier sweeteners, India’s traditional jaggery industry is steadily transforming from a domestic staple into an internationally recognised superfood segment.
